If you need a good, healthy snack try these Cucumber Rolls! They’re quick, just a few ingredients, and yummy 🙂 Great to serve at get-togethers, as an appetizer or a snack.

Here’s what you’ll need:
• Cucumbers (I suggest at least two if you’re serving a few people)
• Your favorite Hummus (I use a slightly spicy one to give a little kick)
• Crumbled Feta Cheese
• 1 Red Bell Pepper
• Toothpicks
• Potato Peeler

Instructions:
• Wash your cucumbers, cut off ends and dispose. Place cucumbers on a napkin.
• Wash your Bell Pepper, cut off ends and center of Bell Pepper and dispose. Dice Bell Pepper and set aside.
• Carefully using the Potato Peeler, peel slices of cucumber (to your liking but not too thin and not too thick, so they can easily still roll)
• Once you’ve cut the number of slices you desire, lay them out on a plate and spread your favorite Hummus on each slice.
• Add 5 – 8 pieces of diced Bell Pepper over the Hummus, spread out on each slice.
• Sprinkle the Crumbled Feta Cheese over each slice.
• From one end, roll up each slice. As you finish rolling each, stick a toothpick through the top so that it holds the roll in place.
*** I like to arrange several Cucumber Rolls on a plate, secured with toothpicks and all, and sprinkle some Feta Cheese Crumbles throughout the plate! Looks pretty and pretty delicious 🙂
